Συνταγές της Μέσης Ανατολής
SUDANESE PORRIDGE (ASEEDA & MULLAH)
Porridge is actually one of the main foods eaten in Sudan. Aseeda
is actually a kind of jelly bread, which can be combined with different
ingredients.
INGREDIENTS:
1 kg Flour
App. 1L Water
200 g Dry peanuts in powder
100 g Dry okras in powder
3 Onions, chopped
2 Tomatoes, chopped
½ cup Olive oil
Yoghurt
Dry coriander
Cumin
Salt & Black pepper
METHOD:
Mullah
Put the fry pan on the heat with some olive oil, add the onions and stir
until they become gold to brown. Add a glass of water and wait until
it starts boiling. Then add the tomatoes and stir all together. Boil the
mixture for approximately 5 minutes. Add the powder of dry peanuts,
some salt and some yoghurt and continue to stir. Keep it on the heat
for 5 more minutes to be thickened. Add the okra powder, salt, pepper,
cumin and coriander and keep on heat for 5 more minutes. Then take
the mixture off the heat.
Aseeda
Heat approximately 1lt water until it boils. Add 2-3 table spoons of olive
oil and 1-2 table spoons of salt. Start adding gradually the flour while
stirring with a wooden spoon. Take off the heat, when it becomes thick.
Serve: Aseeda and Mullah are served together.
