BEEF GOULASH
A real wintry warmer , so yummy and hearty - Beef Goulash is a great one pot dish and a good one for feeding a crowd .
INGREDIENTS
• 50ml vegetable oil
• 1kg shin beef or lean beef large diced
• 1 large onion diced
• 2 cloves garlic chopped
• 1 green pepper sliced
• 1 red pepper sliced
• 2 tbsp tomato puree
• 2 tbsp paprika
• 1 tin chopped tomatoes
• 100ml white wine
• 200ml beef stock
METHOD
• Preheat oven to 160 o C .
• Heat a large non-stick pan over a medium heat and add the oil . When hot , add the beef and sear it in batches , sprinkling some paprika over each batch .
• When seared place into a casserole dish .
• Next add the onions and garlic to the pan and cook for a couple of minutes , then add the peppers and cook for another minute . Add all remaining ingredients .
• Add to the casserole dish cover and place into the oven for 3 hours .
• Serve with boiled potatoes and sour cream .
