MEXICAN BAVETTE STEAK TACOS
This dish is definitely a firm favourite in our house . It looks like a lot of work but it ' s pretty quick and easy to make . It ' s a great way of getting some really nutritious food into the kids without having to convince them . It ' s one of those mealtimes that everyone gets involved in building their own just how they like it . Once prepared just put all the sides , taco shells and steak strips in the middle of the table and let them all dive in .
1 . Spice Rub
• 2 tsp course sea salt
• 1 tsp whole mixed peppercorns
• 2 tsp cumin seeds
• 2 tsp smoked paprika
• 1 / 2 tsp cayenne ( optional for extra heat )
Method Slowly warm the cumin seeds and peppercorns in a dry pan ensuring they don ’ t burn but lightly toast . This releases the natural oils and fragrance in the spices . Pop them in a pestle and mortar along with all the other ingredients and pound them together to combine . Season the meat with the mixture . Next up , prepare your side dishes .
2 . Guacamole
• 2 ripe ready to use avocado
• 1 / 2 bunch coriander
• 3 spring onions
• 1 sweet chilli ( or just 1 / 2 if you don ’ t want it to hot )
• The juice of 1 lime
Method Scoop the flesh from the avocado and mush up with a fork . Very finely dice the coriander leaves , chilli and spring onion and add them along with the lime juice . Season with salt and pepper . Give it all a good mix and that ’ s done .
3 . Tomato Salsa
• 3 large vine tomatoes
• 1 / 3 cucumber
• 3 spring onion
• 1 / 2 red onion
• 1 / 2 bunch fresh basil
• 1 / 2 tsp brown sugar
• 1 tsp white wine vinegar
Method Ideally it ' s good to remove the peel from the tomatoes . You can watch a quick video online if you don ’ t know how to do this . As I say it ' s not essential but it ' s worth doing if you can plus it ' s a good skill to use in the kitchen .
Once the peel is removed , slice the tomatoes in half and remove the seeds and watery bits . You will be left with the fleshy bit . Dice this and put into a bowl . Slice the cucumber in half and scrape out the seeds with a teaspoon and discard . Then dice and add to the tomatoes . Finely dice the red onion and spring onion and chop up the basil . Add all this in and mix well . You can then season with the vinegar and sugar along with a bit of salt and pepper .
4 . Steaks
Now your sides are done just warm through your tacos and heat up a pan to cook off your steaks ! I like to use a griddle pan for this to get some extra charring from the lines on the pan . You can also use a heavy frying pan . Get the pan nice and hot . Sear the steaks for approximately one minute per side for medium rare . You could finish them with a little butter or flavoured oil if you like , just pop this in the pan just before you remove and cover the steaks in it . Remove from the pan , rest them for a couple of minutes , then slice thinly and present on the board or a nice plate . Put everything in the middle of the table and let everyone dig in .
