BAKED TEX-MEX PIMIENTO CHEESE DIP Ingredients 1 ¾ cups mayonnaise ( Helmans ’ prefered ) ½ ( 12 ounces ) jar roasted red peppers , drained and chopped ¼ cup chopped green onions 1 jalapeno pepper , seeded and minced
( or more if you like it hotter ) 1 ( 8 ounce ) block extra-sharp Cheddar cheese , shredded 1 ( 8 ounce ) block pepper Jack cheese , shredded
Instructions
1 . Preheat oven to 350 degrees . Stir together first four ingredients in a large bowl ; stir in cheeses . Spoon mixture into lightly greased two-quart baking dish .
2 . Bake at 350 degrees for 20 to 25 minutes or until dip is golden and bubbly . Garnish if desired . Serve with French bread cubes .

SANDWICH FOR A CROWD Ingredients
• 2 loaves unsliced Italian
• 1 pkg cream cheese
• 1 cup shredded cheddar cheese
• ¾ cup sliced green onions
• ¼ cup mayonnaise
• 1 tablespoon Worcestershire sauce
• 1 pound thinly sliced ham
• 1 pound thinly sliced roast beef
• 1 pound thinly sliced hard salami
• Dill pickle slices
Instructions
• Cut bread loaves in half lengthwise . Hollow out both halves of each loaf , leaving a 1 / 2-in . shell ( discard removed bread or save for another use ).
• Combine cheeses , onions , mayonnaise and Worcestershire sauce ; spread over cut sides of bread .
• Layer ham and roast beef on bottom and top halves ; place pickles on bottom halves . Gently press halves together .
• Wrap and refrigerate for at least 2 hours . Cut each loaf into 7 slices .
JAMBALAYA Ingredients 3 green peppers , chopped 2 large onions , chopped 2 . Tbs . olive oil 2 Tbs . minced garlic 4 cans Red Gold petite diced tomatoes with green chilies – hot 3 lbs . Eckrich Polish Kielbasa sausage , sliced in bite size rounds or medallions 4 large boneless , skinless chicken breasts cook and shredded 2 lbs . ham , cubed Red pepper flakes Cup Brown Minute rice
Directions Heat olive oil in large stock pot Add and sauté green peppers and onions until tender Add minced garlic and heat Stir into the green pepper and onion mixture the smoked sausage , chicken and ham Add the four cans of tomatoes ; stir and simmer for at least a half hour Add uncooked rice to pot ; simmer at least another half hour or until rice is done Add red pepper flakes to taste
SMOKED SWEET KIELBASA BITES Ingredients : 14 ounce kielbasa sausage , sliced ¾ cup Canada Dry Ginger Ale ½ cup brown sugar ½ cup barbecue sauce
Instructions 1 . Place sliced sausage in the bottom of a square baking dish
2 . In a separate bowl , whisk together remaining ingredients . Pour over sausage in dish .
3 . Bake at 300 degrees for 1 ½ hours . Allow to cool slightly before serving .
