Lindley Road , where The Little Griddle currently sits , was available for rent . After a lot of prayer , reflection and discussion , the Petersons decided to move forward with the more permanent location two years later .
Wanda said it was a big step and it was important for both her and her husband to take the time to make sure they were doing what they felt God wanted them to do . Once they knew that , she said , they went by faith .
With the permanent location came some other changes , Wanda said , including changes to the menu . While fair food is great at the fair , it ’ s not always the best choice for lunch , and The Little Griddle added Philly cheesesteaks , patty melts and other items to meet the lunchtime demand .
“ You know , more lunch items rather than corndogs and funnel cakes ,” she said . “ But we still have those , too .”
In June , The Little Griddle celebrated four years since opening its Marion location , and business is still going strong . Marion has been good to the business , Charlie said .
“ The Lord has really blessed us with good help and wonderful customers ,” he said .
Due to demand , Charlie permanently swapped his hammer for a spatula and can be found most days manning the griddle and preparing delicious meals . The Petersons also kept their mobile food trailer and still head out to cook at events or festivals in the area .
While new opportunities may come , the Petersons are happy in Marion and aren ’ t in a hurry to change . If something does come up , Wanda said she and her husband will handle it the same way they ’ ve handled other decisions for their business . They ’ ll pray and reflect on it until they understand what God wants them to do . Then , they ’ ll act on faith . M
