Beer-Brined Smoked Catfish Pâté

Yield : 8 Servings
Ingredients :
• 1 cup kosher salt
• 1 cup dark brown sugar
• 3 ( 12-ounce ) cans cold beer , like Budweiser
• 1 tablespoon peppercorns
• 6 bay leaves
• 1 quart ice cubes
• 4 ( 8-ounce ) skinless catfish fillets
• Olive oil , as needed
• 2 tablespoons hickory-wood dust or small chips ( see note )
Ingredients for Pâté :
• 2 / 3 cup cream cheese
• 1 ⁄ 2 cup sour cream
• 1 large shallot , minced
• 2 tablespoons capers
• 11 ⁄ 2 teaspoons caper juice
• 1 / 4 teaspoon granulated garlic
• 3 shakes of Crystal Hot Sauce
• Freshly ground black pepper , to taste
• Your favorite cracker for serving
