Humming Bird Cake

Ingredients for Cake :
• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 2 cups sugar
• 1 teaspoon ground cinnamon
• 3 eggs
• 1 1 ⁄ 2 cups unsalted butter , softened
• 1 1 / 2 teaspoon pure vanilla extract
• 8 ounces canned crushed pineapple , drained
• 1 cup walnuts , chopped
• 2 cups bananas , chopped
Directions for Cake :

Pre-heat oven to 350 degrees Fahrenheit .

Combine flour , baking soda and salt in a mixing bowl . Set aside .

In a separate bowl , combine sugar , cinnamon and eggs .
4 .
Add the butter and vanilla , mix until mixture is evenly combined .
5 .
Add the flour mixture and mix until it is smooth .
6 .
Fold in the remaining ingredients .

Butter and flour two 9-inch round cake pans and pour in batter .

Bake cake at 350 degrees Fahrenheit for 20 to 30 minutes or until cooked thoroughly .

Remove cake layers from pans onto cooling racks . Cool completely before icing .
10 . Prepare icing while layers cool .
Ingredients for Icing :
• 8 ounces cream cheese , softened
• 8 tablespoons unsalted butter , softened
• 1 pound powdered sugar
• 1 teaspoon pure vanilla extract
• 1 cup walnuts , chopped

Cream together cream cheese and butter .
2 .
Slowly add powdered sugar and vanilla extract until mixture becomes fluffy .
3 .
Fold in chopped nuts .
4 .
Evenly distribute icing between layers and on the surfaces of the cake .
