Ingredients for Broth :
• 10-12 pound whole turkey
• Turkey brine
• Smoked turkey rub
• Wood chips , soaked

Ingredients for Baste :
• 1 cup chicken broth
• 1 ⁄ 2 cup apple juice
• 1 ⁄ 4 cup apple cider vinegar
• 2 tablespoons bourbon
• 2 tablespoons maple syrup
1 . Combine all the ingredients for baste and heat on low until it forms a smooth liquid . Remove from heat .
2 . Remove the turkey from the brine and place on a baking pan . Pat somewhat dry with paper towels and discard the brine . 3 . Rub the entire outside of the turkey with the smoked turkey rub . 4 . Place the turkey on a rack set over a baking pan . Use kitchen twine to tie the drum sticks together . Tuck the wing tips behind the turkey . 5 . Drain wood chips . Place them in the bottom of the smoker with the water tray . 6 . Heat smoker to 225 to 275 degrees Fahrenheit . Place the turkey in the smoker . Spray the turkey every 30 minutes with the basting solution .
7 . Start checking the turkey with an instant thermometer at the 2-hour mark . You want to achieve a breast temperature of approximately 165 degrees Fahrenheit for perfect doneness . The turkey will continue to cook after you take it out of the smoker . Depending on the size of the turkey , this could take anywhere from 4 to 5 hours .
