Creamy Mashed Potatoes

Yield : 8 Servings Ingredients :

• 3.35 pounds Yukon Gold or russet potatoes , peeled and chopped
• 1 stick unsalted butter , plus more for baking
• 5 ounces cream cheese , softened
• 1 cup half-and-half
• 1 cup heavy cream
• Kosher salt , to taste
• Freshly ground pepper to taste
• Milk as needed
Directions :
1 .
Pre-heat the oven to 350 degrees Fahrenheit .
2 .
Place the potatoes in a colander and rinse them in cold water . Place potatoes in a pot
and fill with water .

Bring the water to a boil and cook until fork tender , approximately 20 to 25 minutes .
4 .
Drain the potatoes and then return them to the pot with the burner on low . Mash the
potatoes with a potato masher . Mash approximately 5 minutes . Turn burner off .

Add the butter , cream cheese , half-and-half and seasoning . Stir to combine , and if
needed , add milk . Season with salt and pepper to taste .
6 .
Pour mashed potatoes into a large casserole pan . Dot the surface with butter . Cover with
foil and bake in oven for 15 minutes . Remove foil and continue baking for 10 minutes .
7 .
Serve immediately .
