Corn Casserole

Ingredients :
• 2 cans creamed corn
• 2 eggs , well beaten
• 3 / 4 cup oil
• 1 teaspoon garlic powder
Yield : 8 Servings
• 3 / 4 cup self-rising cornmeal
• 1 cup cheddar cheese , shredded
Directions :
1 .
Grease and flour a 9x13-inch baking dish .
2 .
Mix all ingredients together in mixing bowl , except the cheese .
3 .
Pour 1 ⁄ 2 corn mix into prepared baking dish , cover with cheese .
4 .
Top with remaining corn mix .
5 .
Bake at 350 degrees Fahrenheit for 30 to 45 minutes .

Loaded Mashed Potatoes

Ingredients :
• 4 slices bacon , or more if desired
• 3 pounds russet potatoes , peeled and cut into chunks
• 1 ⁄ 2 cup unsalted butter
• 1 ( 16-ounce ) container sour cream
Yield : 8 Servings
• 8 ounces cheddar cheese , shredded
• 1 ⁄ 2 cup fresh chives , chopped
• Kosher salt , to taste
• Ground black pepper , to taste
Directions : 1 . Place the bacon in a large skillet and cook over medium-high heat turning occasionally until evenly browned , approximately 10 minutes . Drain the bacon slices on paper towels .
2 . Place potatoes into a large pot of lightly salted water . Bring to a boil , reduce heat to medium-low and simmer until fork tender , approximately 20 minutes . Drain potatoes and return to the pot .
3 . Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely . Add sour cream and continue to beat until combined . Crumble bacon into the potato mixture ; add cheddar cheese and chives , stir .
4 . Season potatoes with salt and pepper , as needed to taste .
