Chocolate Cake Ingredients :
• 4 ounces unsweetened or semisweet chocolate , chopped coarsely
• 1 / 3 cup cocoa powder
• 1 cup water , boiling
• 1 cup unsalted butter
• 2 1 ⁄ 4 cups sugar
• 3 eggs
• 1 teaspoon pure vanilla extract

• 2 1 ⁄ 4 cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 cup whole milk
Chocolate Cake Directions : 1 . Pre-heat oven to 350 degrees Fahrenheit . 2 . Butter two 9-inch cake pans . Line with parchment paper or waxed paper . Butter again . 3 . Combine chopped chocolate and cocoa . Pour boiling water over mixture and stir until melted . Cool slightly . 4 . Cream butter and sugar together in a mixer . Beat in eggs one at a time ; add in vanilla extract and melted chocolate . 5 . Sift flour with baking powder and baking soda . Add to butter mixture alternately with milk , beginning and ending with dry ingredients . Mix ingredients only until blended .
6 . Divide batter between pans evenly . Bake for 45 to 50 minutes or until center springs back when lightly pressed . Allow to cool 10 minutes . Invert onto cooking racks and finish cooling . Prepare icing while layers cool .
Fudge Icing Ingredients :
• 8 ounces semisweet chocolate , chopped
• 1 ⁄ 4 cup cocoa powder
• 3 ⁄ 4 cup whole milk
• 1 ⁄ 2 cup unsalted butter
Fudge Icing Directions :
• 3 cups powdered sugar , sifted
• 1 1 ⁄ 2 teaspoon pure vanilla extract
• 4 ounces cream cheese

Place chocolate , cocoa , milk and butter in top of a double boiler . Heat gently over |
simmering water just until chocolate melts . Mixture should be smooth . Cool slightly . |

Whisk in powdered sugar and vanilla extract . Chill until spreadable . |

Combine 1 / 2 cup of the fudge-icing with the cream cheese . Beat until smooth . Reserve for |
the decoration . |

Using the remaining fudge-icing , sandwich the two layers of cake together . Frost the top |
and sides . |
