Ricotta Cheese Cookies with Icing

Ingredients
2 sticks butter 2 cups sugar 2 eggs 1 teaspoon baking soda 1 teaspoon baking powder 1 lb . ricotta cheese ( whole milk ) 2 teaspoons vanilla 4 cups flour
For the Frosting :
2 tablespoons butter 2 cups powdered sugar 1 / 8 cup whole milk ( add a little at a time until it is not too stiff )
* You may use flavoring such as vanilla , anise , etc . then top icing with sprinkles , nonpareils or coconut .
Directions
1 . Cream butter , sugar , add one egg at a time , then add rest of ingredients .
2 . Drop 1 teaspoon at a time on ungreased cookie sheet .
3 . Bake at 350 degrees for 10-12 minutes . Top with icing when cool .
Special Note : Each cookie is made with LOVE . ( Yields approximately 100 cookies )
