Tea Sandwiches

Tea Sandwiches

While I was attending then-Gwynedd Mercy College, I worked as a waitress at Wanamaker’ s. My mom was a waitress in Wanamaker’ s Crystal Tea Room on the 9th floor and was able to get me a job. I worked in the Wanamaker’ s café located in the basement. The special and most-ordered item in the afternoon at both restaurants were the tea sandwiches. In the kitchens, they were made by the hundreds and piled high for the waitresses to select when preparing the customer’ s plate. And of course, the order always came with a“ sweet” treat to have afterward.
Ingredients for the variety of sandwiches
Egg Salad – White bread with crust cut off, hard boiled eggs chopped, diced celery mixed with mayonnaise, and a little bit of mustard
Tuna Salad – White bread with crust cut off, white tuna mixed, diced celery mixed with mayonnaise, and a little bit of mustard
Watercress and Cucumber – White bread with crust cut off, watercress leaves diced, mixed with a little mayonnaise and spread evenly on the bread with thin slices of cucumber on top
Ham Salad – White bread with crust cut off, thinly diced ham and celery mixed with mayonnaise
NOTE: The sandwiches after being prepared are cut and presented in triangles.
