Don’t let the stating-the-bleeding-
obvious name put you off, spring
greens are versatile and arguably less
bitter tasting than kale. Look out too
for a nice piece of plaice, some spinach
and Dorset’s fine crab. New potatoes
are also rolling into view including
the glorious Jersey Royals at the end
of April. There should really be a
fanfare to mark their arrival.
Crispy seaweed, that
addictive Chinese side dish,
is actually made from spring
greens. Shred, fry in oil and
dust with salt, sugar and
Chinese five spice.
