I ’ ve learnt many things along the way and picked up great skills . I love creating cocktail classics , as well as experimenting with new flavours and ideas . Ingredients
3 fresh kumquats 2 bar spoons of pomegranate seeds 20ml fresh lime juice 2 bar spoons of caster sugar Healthy dose of Conker Gin Dust of cinnamon Dash of Peychaud ’ s Bitters
Method
Muddle the kumquats , pomegranate and lime juice together with the sugar . Pour the Conker , bitters and cinnamon into the mix and shake hard with ice .
Garnish
Strain into a pre-chilled rocks glass , garnish with half a kumquat , pomegranate , a mint sprig and , of course , snow ( icing sugar ).
