First add 160g of cranberries, two pinches of dried thyme, 45g of caster sugar, 100ml of water, a dash of freshly squeezed orange juice and ¼ tsp of vanilla extract to a pan. Bring to heat and simmer on a medium heat for 6 minutes. Whilst holding, be sure to pop the cranberries with a spoon. Remove the pan from the heat, cool and strain the syrup.
