ewly refurbished and under the fresh
direction of Head Chef Steve Golding, this
upscale restaurant and bar combines art deco
luxury and contemporary style. The summer
months make use of a large Miami style lido
deck, but in the winter it’s candlelit relaxation on
sumptuous sofas with a roaring fire. The perfect
place then for this wintry eccentric twist on a
quintessentially summertime drink. Christian
Seres, group food & beverage manager tells us
more: "The cranberry and thyme complement
the dry, aromatic nature of gin and add the
winter’s warm flavours to it. A Cranberry &
Thyme G&T hits the spot for a heart-warming,
yet light and fresh, drink."
"Before making the drink, you’ll have to whip
up a batch of the cranberry, orange and thyme
syrup. First add 160g of cranberries, two
pinches of dried thyme, 45g of caster sugar,
100ml of water, a dash of freshly squeezed
orange juice and ¼ tsp of vanilla extract to a
pan. Bring to heat and simmer on a medium
heat for 6 minutes. Whilst holding, be sure to
pop the cranberries with a spoon. Remove the
pan from the heat, cool and strain the syrup.
Now to the fun bit!"

Ingredients
25ml cranberry, orange and thyme syrup
20ml freshly squeezed lime juice
50ml Conker Dorset Dry Gin
Fresh thyme (from the garden or M&S!)
Light or regular artisan tonic water – to
top up to taste
Method
Fill a rocks tumbler (aka an Old Fashioned or
lowball glass) with crushed ice. Next, into a

Boston shaker, pour a single measure of your
cranberry, orange and thyme syrup, add a double
measure of Conker Dorset Dry Gin and a dash
of fresh lime juice. Top with your favourite light
or regular tonic water to your taste and garnish
with the fresh thyme. Shake all the above and
pour over the crushed ice.
