Knives
"When choosing a knife, if at all possible, get to hold
it so you can feel the weight and balance. It’s a very
personal thing. Buying knives as a set or block is more
cost effective and will normally include the knives you
need day to day in the kitchen. It is important to make
sure your blades are kept absolutely razor sharp. Steels,
draw-through, electric, whetstones – all have their pros
and cons depending on your experience and wallet, but
little and often is best. It’s also worth investing in a quality chopping board.
Wood is my preferred material, both for looks and performance, but plastic is a
good alternative. Both materials are kinder to your blades than glass or stone."
