EQUIPMENT NEEDED
• Oyster knife ( or shucker )
• Cutting board
• Chef ’ s knife
• Towel to hold oysters
• Crushed ice or rock salt
• Serving platter
INGREDIENTS
• 2 dozen fresh oysters ( preferably Hood Canal oysters from the Olympic Oyster Co .)
• ½ cup cannabis-infused seasoned rice wine vinegar ( made in the MB2e botanical extractor )
• ¼ cup unseasoned rice wine vinegar
• 2 Tbsp . cannabis-infused tamari ( made in the MB2e )
• 2 Tbsp . fresh-squeezed lime juice
• 2 Tbsp . pure cane sugar
• ½ cup heirloom Asian pear ( micro fine diced )
• 1 Tbsp . sweet onion ( micro fine diced )
• 1 Tbsp . chili paste
• 2 Tbsp . fresh cilantro ( fine chopped )
• ½ tsp . fresh ginger ( rasped or grated )
INSTRUCTIONS
MIGNONETTE
1 . Combine all the ingredients ( but not the oysters or rock salt , silly ) in a small bowl .
2 . Stir this mixture until the sugar and the salt are dissolved then set aside .
WILD OYSTERS IN THE NUDE with Sassy Asian Pear + Tamari Mignonette
PREP TIME : 10 minutes
OYSTERS Shuck the oysters carefully as follows :
1 . Hold the oyster with a clean towel and insert the oyster knife into the hinge of the oyster , twist until it pops open , then run the blade of the knife along the top and bottom of the shell to release the oyster by cutting the abductor muscle , being extra careful to save the oyster and brine in the deep side of the shell .
2 . Thickly spread the ice or rock salt on your desired serving platter . Levelly place the oysters , each on a half shell , onto the ice or rock salt for stability ( so you don ’ t lose any of the oyster brine ).
Spoon a nice amount of the prepared mignonette onto each oyster , serve immediately , and slurp away !
Note : Mignonettes do not keep well ; you pretty much have to use them as soon as you make them for optimum taste and freshness !
