" A few years ago, we were still brewing and bottling in the old brewery, we had to transport the pallets of beer to the hot chamber, just 20 meters away from the bottling building. It was in winter, freezing outside. It appears that after 2 weeks, the second fermentation that we expected never began. We were about to through away 5 000 bottles of Lupulus Brune, but the boss decided finally to open every bottle, put it on the line, and add a small amount of yeast and sugar, to launch the second fermentation. It was crazy but it worked, and finally the production was among the best Lupulus Brune’s batches ! "
