48 IN THE KITCHEN with Silvia Pomegranate & Haloumi Salad Enjoy as a side salad or add some meat or roast pumpkin for a full meal. INGREDIENTS DRESSING A Large platter full of Rocket 1/3 cup of Pomegranate juice Cranky Goats Halloumi, ½ a packet, lightly fried on each side 1/3 cup of olive oil (light taste) A Handful of Pinoli Premium Pine Nuts, roasted or lightly fried 1 teaspoon of Dijon mustard Pomegranate, cut in half 1 teaspoon of honey 1 large clove of Marlborough Black Garlic INSTRUCTIONS ● Place Rocket on a large platter, fry halloumi in frying pan, turn once lightly brown and then place on top of rocket. ● Pan fry pine nuts until lightly brown and sprinkle on top. ● Cut pomegranate in half and hold the half over a bowl, seeds facing down and tap the skin with a wooden spoon, squeezing a little to release the seeds. ● To make dressing, combine all ingredients in a small bowl, place a stick blender into the bowl and mix until well combined. Either dress the salad before halloumi, pine nuts and pomegranate are placed on top, drizzle over the top of entire salad or leave to the side to be dressed by guests (can be safer to let guests do themselves in case of allergies or intolerances).
