MAKES 8 TURNOVERS

These turnovers can be served as a portable snack , as a side dish , or a nice , light lunch with a salad . You can even skip the pastry and serve the filling as a delicious vegetable dish on its own .
1 lb peeled butternut squash , cut into 3 / 4-inch cubes
1 small onion , julienned 1 ½ cups cherry tomatoes 4 garlic cloves , peeled 2 Tbsp . extra virgin olive oil 1 Tbsp . fresh rosemary , chopped 1 Tbsp balsamic vinegar 4 oz feta cheese , crumbled 1 / 4 cup toasted pumpkin seeds
2 sheets * butter puff pastry , thawed (* 450 grams )
1 egg whisked with 1 Tbsp water , for brushing

1 . Set the oven to 425˚F on the Air Fry setting .
2 . Toss the diced squash , onion , tomatoes , garlic , olive oil , salt and pepper in a baking dish large enough to cook everything in a single layer . Roast the vegetables until the squash is fork-tender , stirring once or twice , for about 30 minutes . Cool the vegetables to room temperature . The vegetables can be prepared a day or two in advance and stored chilled .
3 . Move the roasted garlic cloves to a small bowl , add the balsamic vinegar and mash with a fork . Stir the mixture back into the vegetables and gently toss in the feta cheese and pumpkin seeds .
4 . Line 1-2 baking trays with parchment paper and keep the oven set at 425˚F on Air Fry . Cut each puff pastry sheet into 4 squares and place them onto the trays . Spoon the filling onto the centre of each pastry square , dividing between them equally . Bring 2 opposing corners of the pastry together over the filling and pinch them firmly together . Brush the pastry with the egg wash and bake for about 25 minutes , until the pastry is a rich golden brown .
