Parmigiano Reggiano A hard, dry cheese made from cow’ s milk, Parmigiano has a rich, sharp, salty flavour, delivering an umami hit with each bite. Used grated, shaved or in chunks, it can be incorporated into dishes such as pasta and risotto, used to elevate salads and roasted vegetables, stirred into soups or eaten on its own. Try it with a little balsamic vinegar to complement the flavour.
Pecorino Romano The use of sheep’ s milk gives this cheese a unique taste – salty and a little tangy, with nutty undertones. A hard cheese, Pecorino can be grated onto pizza, incorporated into pasta, soups and stews, and is a great addition to a cheese board.
