Welcome

In Australia, we’ re lucky to have people from all over the world call our country home, which brings a rich medley of cultures to our daily life. At this time of year there are plenty of festive moments to share with friends and family and, to celebrate, we’ ve rounded up a variety of culinary personalities to share a recipe and story related to a special occasion dear to their family or community.
Learn about Passover, the important Jewish holiday where people avoid wheat or leavened grains. The ladies behind the Monday Morning Cooking Club, a group dedicated to preserving Jewish recipes, share how to make a flourless chocolate cake ideal for eating year round on page 51. April is also a time for beginnings, and both Sri Lanka and Cambodia celebrate New Year during the month. Culinary creative Nip Dharuka prepares a fish curry inspired by a traditional version served at celebratory Sri Lankan feasts on page 47, while award-winning pastry chef Chan Khun uses the flavours of Cambodia to update a quintessential Aussie favourite by baking a chicken curry into a flaky pie on page 45. At Easter, plenty of families gather to eat seafood, so, on page 43, chef and educator Roberta Muir shares a recipe for an easy prawn dish suitable for a crowd.
This issue is also the Kirkland Signature special, where we look at what makes Costco’ s exclusive label so exceptional. There are traditional Italian cheeses on page 21, expertly blended wines from New Zealand on page 28, and even supplements that can help improve your health on page 26. The stories behind the Kirkland Signature label show the care that goes into supplying products that offer members value, quality and authenticity. Plus, get a glimpse inside the Costco Bakery on page 18 and find out more about how each warehouse creates the delicious baked goods members love.
There’ s all this plus plenty more in this issue, including a Mother’ s Day gift guide on page 10 and a range of sweet and savoury recipes featuring eggs on page 53.
Whether you already have meaningful traditions at this time of year, want to learn about a new occasion or are simply ready to celebrate the everyday, there’ s something here for you.
