Gluten-free pecan pancakes
Serves: 4 Time: 30 mins
• 1½ cups pecans
• 3 large eggs
• 1 banana, mashed
• 1 tbs honey
• 1 tsp pure vanilla extract
• ½ tsp ground cinnamon
• ½ tsp baking soda
• Coconut cooking spray, to grease
• Maple syrup, pecans and berries, to serve
1. Finely grind the pecans in a food processor to a flour-like texture.
2. In a medium bowl, combine the ground pecans, eggs, banana, honey, vanilla, cinnamon, baking soda and ¼ teaspoon of salt. Mix thoroughly until all ingredients are well incorporated.
3. Lightly coat a medium frypan with coconut spray. Place frypan over medium-low heat. Ladle about ¼ cup of batter into the pan for each pancake. Cook until crispy on the edges and flip. Keep cooked pancakes in a warm oven until ready to serve. Repeat until all batter is used. Serve the pancakes with maple syrup, whole pecans and berries.
