Step 17 :
Using a rolling pin , gently roll out the granulated sugar mix .

Using an offset spatula create a flat base on the sugar sheet . You can also pat one or both ends if you wish to wrap a cake with a clean edge .
Cut the bottom of the sugar sheet to create a flat bottom edge .

Applying the sugar sheet onto a ganached cake :

Let the sugar sheet dry flat for 24 hours .
When applying the sugar sheet onto a ganache cake , ensure the sugar sheet is pliable but can hold its shape and the cake is at room temperature or slightly cold . Gently lift the sugar sheet and place against the cake . It should stick with ease .

When applying the sugar sheet onto a fondant cake , ensure the sugar sheet is pliable but can hold its shape and the fondant cake is covered with a thin layer of either vegetable shortening , buttercream or piping gel . Gently lift the sugar sheet and place against the cake . It should stick with ease .
