With the 60th Anniversay of the Queens Coronation we thought that sharing this delicious recipe for Queen Cakes with friends and family and of course a good cup of tea would be in order. Ingredients 100 g (4 oz) butter 100 g (4 oz) caster sugar 2 eggs, beaten 100g (4 oz) self raising flour 50g (2 oz) sultanas Icing sugar, to dust Method Spread out paper cases on baking sheets or put them into patty tins Cream butter sugar together until pale and fluffy, Gradually beat in the egg, little at a time. Fold in the flour and fruit Fill the paper cases, half full.
