This is the flavour we love in our ‘ moreish ’ foods like Chinese and pizza !
Western scientists have only recently recognised it as the " fifth taste ", after salt , sweet , sour and bitter .
Studies confirmed just a few years ago that our mouths contain taste receptors for this ‘ moreish ’ savoury taste .
The ten main foods we find natural Umami in are :
