In an agitated city as Bogotá, healthy eating is a matter of creativity and
agility. It's also a matter of having many fresh ingredients in the
refrigerator.
But today is not one of those days for me, there is not much energy in me,
and the fridge is almost empty.
What do I prepare for breakfast?
Well, something very simple, but powerful:
scrambled eggs with coffee.
Ingredients for eggs
1 onion leek
2 very ripe tomatoes
4 pinches of salt
1 tablespoon oil
1 ounce of coastal serum.
1 pinch of pepper
First chop the onion and tomato
into small pieces. Thenput the
tablespoon of oil in a frying-pan
over low heat; When the oil is hot
enough add the onion, put this
ingredient over medium heat and
stir constantly with a wooden spoon
until the onion becomes
transparent, when this happens add
the tomato and return the stove it
over low heat.In a bowl mix the
four eggs, add salt, pepper and
coastal whey. Beat this mixture with
great force until you get a creamy
texture without lumps.

ingredients for coffee with milk:
• half a cup of lactose-free milk
• half a cup of black coffee
Slowly add the beaten eggs to the
onion and tomato stew when they
have released their juices and they
have not yet evaporated. Stir them
until they are the consistency you
prefer, I leave them soft and juicy.
Finally, heat the milk and coffee
separately and mix them in the
drinking cup.
I prefer to drink it without sugar,
and I recommend that you do it
too.Serve your Colombian breakfast
and start your day with lots of
energy. If you want, you can add
some slices of bread, but I am on
diet so I didn´t. .
