The grapes for Wollersheim’s ice wine are
hand selected and left to develop on the
vine well into December. These overly
ripe and naturally sweet grapes are then
harvested and pressed while still frozen,
a process that requires plenty of patience,
as well as a good deal of cooperation
from Mother Nature. The final product
is a thick, golden concoction of intense
sweetness with notes of candied
pineapple, caramel, apple pie, nutmeg,
and clover honey. Sip it with Fantome
Farm Chevre or Carr Valley Billy Blue.
