Mallo said everything was more than up to code in the food truck — explaining he was used to doing this kind of things on houses , so everything was even stronger than it needed to be .
While Mallo was busy figuring out the construction of the truck , Melbourne was figuring out the structure of the menu . She said she knew her menu was going to be evolving and changing .
“ Depending on where we go , it will be different ,” She said .
For now , the pair plan to stay close , traveling to Richmond , Berea , perhaps even London . But , they do plan to one day go to concerts or carnivals and festivals again . So , their menu needs to be able to evolve .
To keep up with the possibility of an ever-changing menu , Sammich Man Express opted out of the generic print-out menus . Instead , they chose to place a television on the outside of the food truck , displaying an electronic version of their menu .
One good thing about working at the deli before opening their food truck , was they knew what sandwiches were popular and easy to make .
“ For the most part , we did bring quite a bit of the menu over ,” Melbourne said .
They also added a few things like fries and other sides as well as their new Philly sandwiches .
The Sammich Man Express is an exciting retirement prospect for the pair . They get to stay close to the place they love , Berea , as well as travel out to more exciting locations if they so choose .
“ Festivals are fun ,” Mallo said . “ You ’ re there because you want to be . You ’ re not rushing for lunch .”
But , for the time being , the pair is going to stay local . And work on getting their bodies back into shape .
“ After that first night , oh yeah , we felt it ,” Melbourne said .
Despite the rocky start , the pair said the day ran reasonably smooth .
“ We fell back into it pretty decently ,” Mallo said . And most importantly , they are back to doing what they love — serving the citizens of Madison County and the surrounding area delicious food .
