Hitz BBQ serves a full range of smoked meat. Jess and Adam Streich ate at Hitz for the first time on a road trip from Knoxville to Ohio. They found it on-line when looking for something different. scribes it as crispy on the outside with juicy, creamy fat inside. Diners choose from a variety of home crafted sauces with flavors reminiscent of his barbecue travels. Alongside his Kentucky Sweet are spicier options and a honey mustard. His vinegar sauce is reminiscent of Carolina versions, but with a dash of Ale-8-1. Other downhome favorites include hand-battered chicken tenders, fried catfish and a new hamburger op- tion. Most meats come as a sandwich on a brioche bun with a side or a platter with two sides and a hoe cake, a griddle fried cornbread. Kids’ meals run about $5 with adult sandwiches at $7 and platters around $10. While Webb’s passion is the barbecue, the sides are delectable in their own right. Of course there are fries, plus onion rings and braised greens. The slaw and pit beans are both from his mother’s recipes. He has de- veloped a unique, creamy macaroni and cheese recipe. Webb will not reveal the particular mélange of cheeses but said he is astounded with how popular it is. Webb admits that the Hitz location off of I-75 is jok- ingly considered cursed by some locals, due to the high restaurant turnover in the past few years. But with handcrafted, downhome food, a knack for the art of smoking meat and a growing fan base, Webb and his crew are well on their way to breaking that curse for good. Hitz BBQ is open Monday to Saturday, 11 to 8, and Sunday, 11 to 6. They offer dining in-house, take-out, delivery and catering services. On Wednesdays, a fam- ily pack special includes pulled pork, buns and two sides for four people for only $19.95. The smoking at Hitz is long and slow and uses 100% hickory wood.
