Every country has its own way of interpreting these elements as an expression of its traditions and culture. We celebrate this diversity as the theme of this calendar, which exemplifies our passion for authentic local cuisine and culinary trends at every point of our global network.
RUSSIA Borscht with blini topped with sour cream and Ossietra Imperial caviar, garnished with a beetroot chip
FRANCE Tsarskaya oyster baked in a crust of salt, drizzled with vegetable vinaigrette and garnished with Blue Ocean and Salty Fingers
VIETNAM Summer rolls with sprouts, mixed vegetables, starflower, French marigold and garlic chives
USA Marshmallows and pineapple melon grilled on natural sticks with blueberries in a caramelized sugar basket
CANADA Arctic charr spiked with bacon, pepper and bay leaf, grilled and smoked on cedar wood
MEXICO Frozen Margarita on bamboo with limes and red salt from the Pacific Ocean
ITALY Three kinds of Focaccia: crayfish tartar with saffron onion, duxelles of cèpes with pea sprouts and filet of sardine on a vegetable ragout with basil cress
JAPAN Grilled tofu on okras garnished with fermented black beans, eggplant, carrot, ginger, lemongrass and black sticky rice
LEBANON Lemons filled with Tabouleh made of parsley, mint, cucumber, wild tomatoes and red onions
EL SALVADOR Pupusas: a corn tortilla filled with cheese and seed of green beans garnished with filaments of spring onions and bean blossoms
SOUTH AFRICA Celery, fennel, artichoke and leek rolled in bread dough and grilled over a fire
AUSTRALIA Lamingtons: sponge cake cubes dipped in coconut flakes
