Gastronomic excellence at L’ Olive at La Reserva is provided under the watchful stewardship of Parisian, Olivier Claude de Paepe. Having honed his skills in Aruba and at the five-star Hotel Beauvallon at St-Maxime on the Côte d’ Azur, he says,“ I love golf and the international scene. I am so comfortable with all the players and understand straight away the things that they need. We offer culinary excellence in a relaxed setting.”
Such pre-emptive service is evident in the continually changing menu by head chef, Cristina Gutierrez Bergue, which offers some of the finest Andalusian and European cuisine to be found in this part of southwest Spain.
The changing menu makes a play on seasonal specialties including tuna and other Mediterranean fish, fresh vegetables and herbs and special outdoor grill nights to make the most of balmy summer evenings. Coming soon will be a special menu offering some of the favourite dishes of Manuel Piñero, who is curating an exhibition of his extended golfing career at La Reserva.
