Né à Sydney, c’est en assistant ses grands-parents dans leur café
que David Pooley a été conquis par la liberté et la créativité
qu’incarne ce métier. Après avoir travaillé dans divers restaurants
reconnus pour leur raffinement, tel le Quay à Sydney, il s’engage
dans une tournée orientale en se tournant vers l’hôtellerie de
luxe. Grand amoureux de la mer et des îles, l’excellence de l’hôtel
One & Only Reehti Rah aux Maldives l’entraîne, en 2017, dans
une nouvelle aventure faite de romantisme, de luxe et d’une
touche de magie. Prônant la simplicité et l’authenticité, il puise
son inspiration du quotidien, de son environnement comme de
ses clients. Selon lui, « être chef est un réel défi où il faut être
passionné et porter un amour sincère à ce que l'on fait », tout
en jonglant avec une bonne dose d’innovation et une constante
ouverture sur l’extérieur.
Sydney-born, David Pooley took seriously his role as his grandparents’
assistant in their cafe, to become acquainted to the freedom and creative
knowledge involved in the trade. After having worked in different
refined top-notch restaurants, such as Quay in Sydney, he embarked
on an Oriental journey oriented towards luxury hotels. Being fond of
the sea and island life and cultures, he crossed the ocean to anchor his
know-how in the midst of One & Only Reehti Rah in The Maldives
in 2017 - where the excellent reputation of the resort hoisted a new
culinary journey punctuated by romanticism, luxury and a pinch of
magic. A faithful advocate of simplicity and authenticity, his inspiration
is prompted by daily life, his immediate environment and his clients
alike. As he states, “To work as a chef, it takes a great deal of dedication
and a true love for what you do”. And he does so while being proactive on
innovation and nurturing an everlasting outlook on the world.
Michel de Matteis – Executive Chef, Royal Palm, Mauritius
Issu d’une famille d’origine italienne, Michel de Matteis est tombé
dans la marmite très jeune. Son jeu préféré, celui de prétendre être
un cuisinier maniant la louche d’une main experte au milieu de
casseroles vides, s’imposera très vite comme une vocation. Après avoir
fait ses armes dans des restaurants et hôtels cotés en Europe – dont le
grand Hôtel Mirabeau à Monaco – et avoir cumulé de nombreux prix
culinaires, Michel de Matteis s’embarque pour le Royal Palm à l’île
Maurice, où il cuisine depuis maintenant plus de 15 ans en proposant
une cuisine néo-mauricienne sublimée d’une subtile touche française.
Pour lui, le métier de chef est un terrain magique où il faut être mille
choses à la fois, où l’on est « en même temps financier, créateur, à
l’écoute des clients et des artisans ».

Born in an Italian family, Michel de Matteis has fallen since a very young
age into the cauldron, so much so that his favourite game was to pretend
to be a cook. His skilful handling of a ladle amidst empty pans was just a
good omen for the future, in fact growing into a true vocation. His first
culinary experiences brought him to prestigious hotels and restaurants in
Europe – including the much sought-after Hôtel Mirabeau in Monaco –
and he was even crowned by several gastronomy prizes. Fifteen years ago,
Michel de Matteis set sail towards Royal Palm in Mauritius Island to kick
off a neo-Mauritian cuisine, subtly enhanced by a French touch. Being a
Chef is like playing endlessly a tune on a magical stage where hundreds
of notes are played simultaneously, a place where one becomes ubiquitous,
juggling between finance, creation, clients’ relation and craftsmanship.
