Although Chef Prabeen’s day to day routine has shifted, he continues to oversee daily operations--which includes creating menus that support the new “grab and go” concept for guests, locals and the employees the hotel team continues to feed on and off their shifts. He’s now back in the kitchen and on the line with everyone else, pitching in, to ensure all needs are being met while temporarily working with a more limited team.
