Executive Chef Prabeen Prathapan leads the culinary team
at Pasea Hotel where he oversees all culinary operations on
property. Although Chef Prabeen’s day to day routine has
shifted, he continues to oversee daily operations--which
includes creating menus that support the new “grab and go”
concept for guests, locals and the employees the hotel team
continues to feed on and off their shifts. He’s now back in
the kitchen and on the line with everyone else, pitching in,
to ensure all needs are being met while temporarily working
with a more limited team.

Affectionately known as “Chef V” in the kitchen,
Executive Chef Vincent Savignano has more than 25 years
of experience in the culinary and hospitality industries and
has honed his craft in more than seven states, including
Arizona, South Carolina and Washington. Regardless of
where he’s been, Chef Vincent has stayed true to his
Italian roots and states his family is the reason why he
ventured into the culinary world. The Estancia team is
currently helping the local community by distributing take
out, and fresh produce bags.

LA COLECCIÓN RESORTS
The team at La Colección Resorts, a collection of 16
properties located in Mexico and the Dominican Republic,
have created a series of their favorite guest experiences to
capture the essence of their resorts, from artistic chocolate
sculptures to colorful rice art creations as bed décor. Guests
will get an exclusive behind-the-scenes look on how some
of the elaborate rice art is made at the resorts and a tutorial
on how to recreate their own masterpiece at home with the
guidance of our hotel experts.
