Chicken Bbq Sweet STUFFED Potatoes Prep Time: 15 Min Cook Time: 45 Min Serves: 4 INGREDIENTS 4 sweet potatoes , medium 1 pound chicken breasts kosher salt , to taste ground black pepper, to taste paprika , to taste 1 tablespoon olive oil 1 clove garlic , minced 1. Preheat oven to 375°F. Line a baking sheet with foil. Wrap each sweet potato in a piece of foil and place on baking sheet. Bake on center rack of oven for 45 minutes to 1 hour and 15 minutes, or until potatoes are soft to the touch 1 shallot , diced (½ cup) 1 red bell pepper , diced 2 cups kale 2 cups baby spinach 1/4 cup barbecue sauce 1/4 cup thin sliced green onions 1/4 cup cilantro leaves 3. In the same pan cook garlic and shallot for 1 minute on medium. Add the bell pepper and cook for an additional 2 minutes stiring continuously.
