n addition to presenting physical conditions for the installation of production
machines and accessories, the infrastructure for the business must be divided into
sectors, to avoid contamination of the products and respect the ow of production.

- Deposit of products for sale;
- Product processing;
- Packaging, labeling, packaging;
- Bathrooms and dressing rooms for employees;
- Ofces for management, marketing, purchasing.
The design, project, and manufacture of machines and equipment for the brewery
should provide a complete sanitary construction, facilitating routine cleaning and
disinfection.
Treating brewery efuents is vital for the safety and maintenance of a clean
environment, and this importance is further evidenced when we consider that the
beverage manufacturing processes use water as raw material. Most beverage
industries require some degree of treatment of their waste since they are discarded in
rivers, in municipal treatment plants, for use in the eld or even in the treatment systems
of these companies.
