This cheesecake-inspired recipe makes enough for now , and enough to put in your new container for later !
Instructions Mix the the soft cream cheese , Greek yogurt , sugar , salt , and vanilla bean paste / extract in a bowl ( if using a stand mixer or hand mixer , use the whisk attachment on medium high speed ). Beat until smooth , making sure to scrape down the sides once or twice .
In a small bowl , combine the more sour fruit with the teaspoon of sugar and toss together until coated .
Using 3-4 small glasses ( and your container !), layer the parfaits starting with fruit and alternating ( and ending ) with the cheesecake mixture .
Refrigerate until ready to eat ! ( If using a crunchy topping , add before serving !)
Tip : Make sure the cream cheese is soft or the mixture will get lumpy . Take it out of the fridge at least an hour before or you can microwave it for 10 seconds to soften it .
