Recipe Remix

Makes 8 halves – 60 cals each

4 Large hard boiled eggs – 280 cals

4 Tbsps. Sabra Roasted Red Pepper Hummus – 140 cals

1 Tbsp. Honey Mustard – 30 cals.

Salt and pepper to taste; roasted red pepper for garnish

Boil the eggs and allow them to cool in a bowl of cold water. Peel, slice in half and carefully scoop out the yolks into a mixing bowl, reserving the egg whites. Add the hummus, mustard, salt, pepper and mix until smooth.

To make life easier, and for a nicer presentation, I like to use a piping bag – the same type used for cake decorating. Fill the bag with the egg mixture and pipe into the egg whites until the centers are filled and there is a slight peak at the top of each. Use the diced red peppers that came with the hummus (they are in the center of the dip) to garnish the tops. Serve chilled.

The calorie difference may seem minimal in this recipe, but most folks don’t eat just one half, so the calorie savings adds up if you eat 3-4 of these. As an added bonus, the remix version has 75% less fat! If you are serving a larger number of guests, simply double the recipe. Til next time….Happy Grazing!

Monthly Weigh in – Last month I reported a loss of 10lbs, and attributed half of that to water weight. I knew I would not see such a big drop this month and I was right. Not only was there no significant weight loss… there was none at all!! Yep, thanks to work/life stres,s and comforting with food, I have nothing to show for this month. Thank goodness for my dedication to exercise or my weight would have gone up, so I will be happy with that and keep up the good fight!
