CARROT & SWEET POTATO SOUP Many foods have stimulating effects on the immune system and it can be a simple thing to include them into your diet. Also by eating organic or seasonally you will be making sure that the food you eat is richest in essential vitamins and minerals thus aiding your immune system. This is great soup recipe I found from "nibbles and bits" that is full of immune boosting nutrients, and very importantly tastes fantastic and is easy to make. Ingredients Steps ◊ 1 medium sweet potato, peeled and cut into small cubes 1. Place the stock, water, sweet potato, carrots, onion and garlic in a pot over medium heat. Bring everything to the boil. ◊ 1/2 kilo of carrots, peeled and sliced ◊ 1 small brown onion chopped ◊ 3 cloves of garlic, sliced ◊ 2 cups vegetable stock ◊ 1 cup water ◊ 1 tablespoon fresh ginger root minced ◊ 1 1/2 teaspoons of dried dill ◊ 1 1/2 teaspoons salt ◊ 1/2 teaspoon of nutmeg ◊ 1 cup almond milk 2. Once the stock is boiling, reduce the heat a little and simmer the vegetables until they are tender. This usually takes 15- 20 minutes. 3. When the vegetables are tender, turn off the heat. Blend the stock and vegetables. (I use a wand hand blender for ease). 4. Return the soup to the pot and stir in the spices and milk. Reheat the soup if it is a little cool for you. 5. Enjoy!! 9
