MEMAW JANE ’ S PICKLED EGGS
Even though some canning connoisseurs may argue pickled eggs are not true canned food , this family recipe is so easy that anyone can make it , and it is so delicious that anyone can eat it .
INGREDIENTS
1 1 / 2 dozen hard boiled and peeled eggs , 2 cans of small whole beets , 1 1 / 2 cup sugar , and 1 1 / 2 cup vinegar .
PREPARATION
Drain beet juice from each can . In large pan combine beet juice , vinegar and sugar . Add whole beets to pan and simmer for 15 – 20 minutes . Arrange boiled eggs in tall plastic / glass container with lid . Pour beets & beet mixture over eggs and cover . Allow to cool and place in refrigerator . Always refrigerate within 12 hours . It is best to allow eggs to brine for 48 hours or so before eating for optimal flavor .
