In recent years, commercial producers have begun to develop a progressive interest in livestock behavior in everything from weaned calves to grass cattle and cow herds. While cow-calf operators have always shied away from wild and flighty cattle, they are beginning to focus on the selection of replacement heifers as an area of large potential and possibilities. Temperament Scoring Systems Show Relevance The behavioral response of cattle to restraint and handling is an indication of temperament (Burrow and Corbet, 2000). Variation in this trait has allowed the beef cattle industry to develop measurement techniques and scoring systems such as chute, exit and flight speed to correlate temperament with branches of cattle productivity. Chute scoring is a numbered system grading an animal on the amount of struggling or aggression they portray in a chute, usually from a ‘one’ meaning calm to a ‘four’ indicating extremely aggressive with violent struggling. Exit speed uses point scoring monitoring the speed of the animal as it leaves the chute, with flight speed measuring the actual velocity of the animal at a designated distance from the chute exit. By using these and similar systems, numerous studies have shown that cattle with excitable temperaments have higher levels of stress hormones which in turn produces a lower rate of gain and decreased growth rates. These animals also display negatively affected carcass characteristics from stores of energy and protein, in addition to more bruising and larger numbers of dark cutters.
