Popcorn Balls
A simple, fun snack recipe!
Ingredients:
- 3/4 cup of corn syrup
- 1/4 cup margarine
- 2 teaspoons cold water
- 2 and 5/8 cups confectioners sugar
- 1 cup marshmellows
- 5 quarts plain popped popcorn
Directions:
In a saucepan over medium heat, combine the corn syrup, margarine, cold water, confectioners' sugar and marshmallows. Stir until the mixture comes to a boil. Next, carefully combine the hot mixture with the popcorn, coating each kernel. Now, grease your hands with vegetable shortening and quickly shape the coated popcorn into balls before it cools. Finally, wrap each with plastic wrap or wax paper and keep at room temperature.
Raspberry Sauce
A favorite dessert topping!
Ingredients:
- 1 pint fresh raspberries
- 1/4 cup of white sugar
- 2 tablespoons orange juice (You can substitute with pineapple juice.)
- 2 tablespoons cornstarch
- 1 cup cold water
Directions:
1. Combine the raspberries, sugar, and orange juice in a saucepan. Whisk the cornstarch into the cold water until smooth. Add the mixture to the saucepan and bring to a boil.
2. Simmer for about 5 minutes, stirring constantly, until the desired consistency is reached. The sauce will thicken further as it cools.
3. Puree the sauce in a blender and strain it through a fine sieve. Serve warm or cold. Refrigerate the remaining sauce; it will keep up to 2 weeks.
