“SEMI HOMEMADE” COCONUT CAKE
CAKE LAYER INGREDIENTS:
• 1-Duncan Hines Yellow cake mix
• Five eggs
• Oil as called for on box
• Milk – instead of water – in the same amount as called for on the box
• 1 teaspoon vanilla
• ½ cup finely shredded coconut
INSTRUCTIONS:
Mix all ingredients using a hand mixer, except for coconut. When well
mixed, gently fold in coconut. Bake in two layers in well-greased,
floured pans lined with parchment.
SEVEN MINUTE FROSTING INGREDIENTS:
• 2/3 cup water
• 1 2/3 cup white sugar
• 2 tablespoons light corn syrup
• 6 large egg whites
• 1 tablespoon vanilla
INSTRUCTIONS:
• Fill lower part of double boiler with water, paying careful attention to
the level, as you do not want the water to touch the bottom of the insert
when placed inside.
• Bring to a slow steady boil. Meanwhile, mix 2/3 cup water, white
sugar, light corn syrup and egg whites. Add it to the top of a double
boiler.
• Blend using mixer with whisk attachment over boiling water and cook
for exactly 7 minutes, beating constantly until soft peaks form.
• Remove from heat and continue to beat until proper consistency for
spreading is established. Frosting will firm quickly as it is spread and
cools.
• Before frosting, place bottom layer on cake stand and line all around
the bottom with waxed paper (this will catch coconut as you apply and
help with cleanup).
• Working quickly, smooth frosting over bottom layer, top with coconut.
Then add top layer, spread frosting and top with more coconut. Finally,
frost sides and coat with coconut.

EASY NO-BAKE PROTEIN ENERGY BITES
Prep Time: 5 min. | Cook Time: 30 min. | Total Time: 35 min. | Serv: 24
Easy No-Bake Protein Energy Bites recipe packed with a great balance of
complex carbohydrates, fiber, protein, and healthy omega 3 fatty acids.
INGREDIENTS
• 1 cup oats (use gluten-free oats if needed)
• 1/2 cup chunky peanut butter (non-oil at the top kinds)
• 1/2 cup unsweetened desiccated coconut
• 1/2 cup mini chocolate chips
• 1/3 cup honey
• 1/4 cup chia seeds
• 2 tablespoons vanilla protein powder (use gluten-free if needed)
• ¼ teaspoon cinnamon
INSTRUCTIONS
1. Mix all the ingredients together in a bowl until it looks like an evenly
distributed, uniform dough.
2. Roll the dough into twenty-four 1-1/2 inch balls.
3. Refrigerate the bites for 30 minutes.
4. Store in an airtight container in the refrigerator for up to a week.
