What you'll need

1 1/2 Lemons

1 Clove garlic

1 Tablespoon olive oil (plus extra for the grill)

1 Teaspoon dried oregano

1/4 Teaspoon salt

1/8 Teaspoon pepper

8 Chicken tenderloins (about 1 1/4 lbs)

8 Skewers

Accompaniment: Cucumber-Yogurt Sauce

How to make it

Squeeze the juice from the half-lemon into a zippy bag. Squeeze garlic through a garlic press into the bag. Add oil, oregano, salt, and pepper. Add chicken; seal bag and turn to mix and coat.

Marinate 15 minutes or longer

Brush outdoor grill of grill pan with oil; heat. Cut remaining lemon into 8 wedges. Thread one chicken tender onto each skewer, then skewer a lemon wedge.

Grill 4 minutes, turning once, until chicken is lightly charred and cooked through. Place on a platter. Serve with Cucumber-Yogurt Sauce.

Nutritional info varies with section of chicken used. Breast will give lowest fat intake.
