Using the word as to make something sexy or to add on to their sex appeal, was registered in 1942. And not so long ago the first to ever be named a sex symbol is still recorded as Marilyn Monroe who was a very well known actress and model of the 50s, which can be found to be a bit offensive because a sex symbol is said to be a person who is perceived to be extremely attractive by a big crowd of people and many people wonder if her fame has anything to do with that even though she was very talented.
Sex as in the act of sexual intercourse has been seen in many ways throughout decades. Almost all living beings have sex but it can mean different things to certain people. In an article titled A Brief History of Human Sex which is specifically about sex history, the author Heather Whipps quotes: it is nearly impossible to tell, however, whether people enjoyed sex more 50 years ago or 50,000 years ago, said David Buss, professor of psychology at the University of Texas and author of "The Evolution of Desire: Strategies of Human Mating" (Basic Books, 2003). But we can all agree that there is no way it could have been much more different than the way it is done today.

Sex is a biological and natural act that is very naturally seeked by the human being but amongst us there is society. There’s always the question of it being socially acceptable or not which makes people think about it as a bad, awkward, or even something to be ashamed of.
