This is a stir fry, that, as the name suggests is sure to spark up
your evening, and your taste buds! A flavor bursting combination of spices, tofu, and teriyaki sauce, that is irresistibly simple
to make, and delicious to eat.
Serves: 4
Preparation Time: 20-25 minutes Ingredients
1 lb firm tofu
1 cup rice
2 16 oz packages frozen Asian stir fry mix vegetables 1 medium onion
2 cloves of garlic
1⁄4 cup soy sauce (can used reduced sodium)
1 tsp ginger powder OR 1 tbsp fresh
1⁄4 tsp cayenne pepper powder
1⁄4 tsp chili powder
2 tbps brown sugar OR 3 tbps honey
2 eggs
FRESH VEGETABLE AMOUNTS – 1 cup snow peas, 1⁄2 cup shredded or
sliced carrots, 1 cup broccoli, canned ingredients – 1⁄4 cup baby carrots and
sliced water chesnuts

Steps
1. First, start your rice. Put 1 cup of white or brown rice into a 6-8 cup pot. Add
2 cups of water. Bring to a boil, once boiling, reduce the heat to medium low,
put on the lid and simmer for 20 minutes.
2. As the rice cooks, cut the tofu into 4” pieces. Drizzle a healthy oil into a pan.
Turn on the heat to medium high. Spice the tofu as the pan heats up.
3. Pan fry the tofu for 2 minutes on each side, until golden brown.
4. Cut all tofu into the 1” cubes, set aside.
5. Chop up your onion, garlic, and other vegetables if they are fresh. Pan fry
all of your vegetables, whether fresh or frozen in oil.
6. Once the vegetables are nicely browned, add two eggs. Mix the eggs
around all of the vegetables until they are cooked.
7. If the rice is done, take off the lid, remove it from the heat and set aside.
8. Add the soy sauce, brown sugar, and additional spices. Cook until the
sauce has thickened slightly, add 1 tbsp cornstarch if needed.
9. Stir the rice into the teriyaki vegetables, and at the last moment carefully
stir in the tofu as it is delicate.
