Pancake Recipe Makes 12-14
100g plain Flour
2 Large Eggs
275 ml milk
Pinch of salt
Oil or butter for frying
Sift the flour and salt into a large mixing bowel. Make a well in the middle of the flour and add the 2 eggs. Using an electric whisk (or a balloon whisk) whisk the eggs gradually mixing in the flour from the edge, as it begins to thicken add the milk a little at a time.
Once all the milk has been added, scrape the side of the bowel to ensure all the flour has been incorporated and mix for a further minute or so until it is smooth and the consistency of thin cream.
Add a little oil or butter to a frying pan, heat until it is really hot then turn the heat down to medium. Add around 2 tablespoons of the mixture to the pan (ideally using a ladle), tip it around so it covers the whole of the pan. After around 30 seconds flip the pancake and cook for around another 20 seconds.
Repeat until all the mixture has gone.
