W H A T ’ S C O O K I N G b y T r a c y C a r p e n t e r Easy Cooking When Staying at Home It’s happening.  You are running out of ideas to make for supper?  Sometimes it can seem like there’s “nothing” to eat.  It’s happened to all of us. You return home famished after a hard day at work to whiny children or you have been confined to your house for thirty plus days due to the corona social distancing order.   You scurry into the kitchen to grab a bite to eat and upon glancing in the fridge, nothing easy jumps out at you and you realize there’s nothing to eat.  Well, maybe not nothing.  We exaggerate, of course, when we say there’s nothing to eat. You have food in the fridge, but nothing jumps out at you and says, “Eat me.”   When we say there’s “nothing to eat”, what we mean is…THERE’S NOTHING EASY TO MAKE. If you’re avoiding going grocery shopping, or your stores are running low on supplies during the COVID-19 pandemic, and before you get hangry, here are a few flexible meal ideas you can achieve with many ingredients you may already have in your pantry- just remember to wash your hands!
