Simple , Easy Pulled Pork

Pulled pork is a great meal for the lake . You can feed a large crowd or have two or three meals for a single family . You can start it slow overnight on Friday night or cook a bit faster during the day on Saturday and never miss a minute on the water . We like to serve as a BBQ plate the first time and then as sandwiches for the second meal . The only people that don ’ t like leftovers are those who never do the cooking . We typically serve with coleslaw and baked beans , but potato salad is a good choice as well . And , dill pickles are a must !
One six-to-ten-pound bone-in Boston Butt ( pork shoulder roast )
Ground Black Pepper , Salt ( if rub does not contain salt ), Rub of your choice
Mustard or Cooking Spray
Prep Time : 15 – 30 minutes
Cook Time ( at 225⁰ F ): About 2 hours / pound , so 12 – 20 hours ( see below on how to decrease the time )
Cook to a minimum internal meat temperature of 190⁰ F , 203⁰ F preferred
